Pink Lemonade Soda Pop Cupcakes

I’m starting to get a little nervous about Summer. Everyone keeps warning me about the Texas heat, which I know I am completely unprepared for. I’m used to Colorado summers that are usually nice and mild. Sure, we have days that hit in the nighties, and the occasional hundred degree day, but it is so dry there that it is no comparison (or so I’ve heard).

The humidity is what scares me the most. What will it do to my hair? My makeup, or even worse…my baking?! Well, I have anti-humidity hairspray and makeup setting sprays, so I am good in those areas. The baking though, still makes me somewhat nervous.

One thing I was happy to leave behind, was baking in high altitude. I do not miss that at all! My dough actually rises, and my cupcakes eternally stay domed. It is a thing of beauty!

Speaking of beauty, let me tell you about these adorable cupcakes. They are hands-down the easiest cupcakes you will ever make. They only call for two ingredients: cake mix and soda pop. That’s it. They are a huge thing in the south, so I felt it would be fitting for me to jump on the bandwagon. Even more so, because I found this great Pink Lemonade cake mix. The icing has a unique freshness from the use of lemon curd. Together, they make the perfect escape from the heat of summer.

Preheat oven to 350 degrees and line muffin tins with cupcake liners.

Screen Shot 2017-09-04 at 2.26.36 AMBeat cake mix and soda pop on low speed for a minute. Beat for an additional two minutes on medium speed.

 Scoop into muffin tins ( filling them 2/3 full) and bake for 15-18 minutes.

 Allow them to cool before removing them from the pan.

 While cupcakes completely cool, prepare the icing.First cream butter until light and fluffy, for about 2 minutes.

 Mix in the lemon curd.

 Add in the sugar, one cup at a time.

 Slowly add milk, until desired consistency. Add lemon oil, vanilla extract, and food coloring if desired.

 Pipe Frosting onto cupcakes

Garnish each cupcake with a straw and a lemon slice
