I have always loved strawberry milkshakes. I have never been one for chocolate, since I had been allergic to it for much of my childhood. Not going to lie, one of main things that drew me to them was the fact that they are pink. I’ve always eaten with my eyes, what can I say?
These cookies will make you do the same. The sparkling pink sanding sugar carries all the visual interest. They start with a strawberry cake mix, which if you haven’t tried it before, it’s pretty good. I feel like it is so different from all the other kinds of cake mix. Something about it is incredibly nostalgic. A box of pudding mix is also added for the milkshake flavor.
The best part about these cookies, is that they have a marshmallow stuffed inside them. This is what really sets them off. It’s almost like whipped cream on the top of the milkshake. The sanding sugar adds a nice crunch and sweetness (not that it really needs anymore).
Preheat oven to 350 degrees, and line a baking sheet. In a large bowl, stir together the cake mix and pudding mix.
Mix in the oil.
Stir in the eggs, and continue mixing until smooth.
Flatten a 2 teaspoon sized piece of dough into a circle.
Place a half of marshmallow in the middle of the circle. Wrap the dough around the marshmallow, making sure that it is completely covered.
Roll the dough ball into the pink sanding sugar.
Place on baking sheet, and repeat with remaining dough and marshmallows.
Bake for 8-10 minute until edges are slightly golden and puffy. These are better served when warm (the marshmallow will still be gooey!)
