Sugar Cookie Bark

Christmas is almost here! I hope all of you are having an incredibly blessed Holiday season. I know with the million things left to do, it can seem extra stressful. Don’t forget though, to take some time to cherish those special people in your lives. I’m not going start getting preachy I promise, I’ve just seen some of those close to me lose someone unexpectedly. It really shakes you and makes you realize you should never take anything or anyone for granted. And with all the negativity lately, it seems like Christmas is here just in time. 🙂
If you are looking for something do or share with your loved ones, this recipe is perfect. It makes a lot so it would make a perfect gift to hand out.  It is also pretty difficult to mess up so you can whip this up quickly with little thought or effort This bark is like a really good sugar cookie that is topped candy. It bakes low and slow, which should give you some time to work on another item on your to-do list. Just don’t forget about it in the oven!

Recipe:



Preheat oven to 325ºF and line a baking sheet with parchment paper. Set Aside. In a large bowl, cream the butter and sugar together on medium speed.
Add in the egg and almond extract, and beat on high until smooth.

In a separate bowl combine: flour, salt, and baking powder. Gradually add the flour mixture to the wet mixture, blending until everything is incorporated. (Dough will be a little sticky)

Spread onto the pan (about 1/3 inch thick) using an icing spatula. Bake for 20-25 minutes or until edges are barely golden.

Set aside to cool.

  

 Once cookie layer has cooled, gather all of your items for the topping.

 

Place wafers in a microwave safe bowl with the shortening(this will help thin out the melted wafers), and microwave in 30-second intervals. Stir after every interval, until they are melted.

Pour over the baked cookie layer, spread out stopping just short of the edges.

 Top with sprinkles and candy. (You will want to move quickly as the candy coating hardens quickly.Allow the layer to fully set. (You can place it in the refrigerator to speed up the process)

Once the bark has set, you can choose to break it apart or cut it using pizza slicer.
