Preheat oven to 375ºF and line a baking sheet with parchment paper.
Add in the eggs
Add vanilla, and continue stirring until smooth.
Stir in the chocolate chips.
Scoop dough balls using a mini cookie scooper. Bake for 8-9 minutes or until cookies are puffy.
Allow them to cool while you are preparing the filling.
Stir cup of peanut butter confectioner’s sugar.
Stir in the water/milk
Scoop into a piping bag.Gently press the tip into the bottom of a cookie, while filling a fair amount of filling into the cookie.
Repeat with remaining cookies.
