Hot Chocolate Cookies



It’s hard to believe that summer is right around the corner, and yet I’m posting a recipe for hot chocolate cookies. It’s even supposed to get to 90 degrees this week. Go figure! As you may know, I am not the biggest fan of chocolate. I know, it shocks me too every time I say it. These cookies, however; have won me over. I wanted to create a cookie that is thick and chewy. I wanted them to them to be decadent without being overly rich. Well, here you have it: the only chocolate cookie recipe you will ever need!


Preheat oven to 375 degrees and line a baking sheet with parchment paper. In a large bowl cream the sugars and butter together until fluffy.

Add in the egg and vanilla and beat until mixed in.

In a separate bowl, stir the flour, cocoa powder, salt, and baking soda together.

Gradually add the flour mixture. Mix until just combined.

Stir in chocolate chips.

Scoop dough with a medium sized scooper and roll into a ball.Place on baking sheet, and repeat with remaining dough.

Bake for 10-12 minutes or until they are puffy and crisp around the edges.Allow them to cool completely before dipping in candy coating

When they cool prepare the candy coating, by melting in the microwave in 30-second intervals. Stir after each interval.

Dip (whatever cookies you chose to be the top of your sandwiches)partially in the candy coating. Then top with sprinkles and allow them to set on wax paper.
