Happy first day Summer!! I love this time of year! It always reminds me of warm summer nights, sitting at a bonfire and roasting marshmallows. S’mores and summer go hand in hand. That is why I came up with this recipe just in time for summer. These doughnuts have all the elements of the classic s’more, including a marshmallow glaze. They can be baked instead of fried, and you can customize your toppings any way you like.
Stir the milk and white vinegar together. Allow it to sit for 5 minutes (this will create buttermilk.
Spray a doughnut pan with nonstick cooking spray and preheat oven to 325 degrees.
Beat the butter, sugar, and buttermilk together.
Mix in the eggs and vanilla extract.
In a separate bowl, stir the flour, cocoa, salt, baking soda, and cinnamon together.
Gradually blend the flour mixture into wet mixture.
Fill each doughnut cavity 2/3 full with dough.
Bake for 8-10 minutes or until they spring back when pressed. Let cool before moving to a cooling rack lined with wax paper (for glazing)
Prepare marshmallow glaze by melting the water and butter in a nonstick pan over medium heat. Stir in the marshmallows. Continue stirring until they are completely melted.
In a separate bowl, stir the sugar and salt together. Then Remove marshmallow mixture from heat and stir in vanilla.
Add melted marshmallows to the sugar mixture, and stir until everything is combined.
Dip each doughnut in the marshmallow mixture (you can dip them twice for a thicker coating), then top each doughnut with Golden Grahams, mini marshmallows, and mini chocolate chips.
