Candy Corn Cookies

Hard to believe it’s already fall again! I met seems like I was just posting last year’s Halloween recipes. If there was only a way to slow down time just a bit. I’m sure you all feel the exact same way. There are just not enough hours in a day! 

I may not have to solution to the never ending time issue, but I do however, have the softest chewiest cookies for you to try! They are full of candy corn goodness that melts and carmelizes in the oven. They great for these crisp fall evenings. 

Preheat oven to 350 degrees and line two baking sheets with parchment paper. In a large bowl mix the butter and sugars together. 

Blend in the oil, egg, and vanilla. 

In another bowl, stir the flour, baking soda, salt and cornstarch. Gradually add to wet mixture.

Stir in the candy corn 

Follow with the sprinkles

Roll into tablespoon sized balls and bake for 10-12 minutes.

The candy corn will melt in the oven, so I like to press some fresh pieces into each cookie for a nice presentation.
