Think back to your childhood. Don’t you remember how exciting it was to have a fresh pitcher of Kool-Aid?! I remember going over to friends houses, and being overjoyed when their mom offered Kool-Aid. It never mattered what flavor it was, I loved them all.
Why was so obsessed with the stuff, you ask? Well, it was probably because I was never allowed to have it at home. My mom (bless her heart) worked hard to keep my ADD and food allergies at bay, by keeping me off of sugar. Although I didn’t have sugar very often, I was obsessed with the stuff. Isn’t it funny though, that I went on to create a baking blog?! Crazy how life works! I’m sorry Mom!
Speaking of Kool-Aid, did you know you can make some pretty spectacular cookies using a couple packets of Kool-Aid. Here is a quick and easy recipe that you can adapt to your personal taste. Any flavor of Kool-Aid will work for these cookies. The possibilities are endless! The orange flavor/color is fun Halloween and is perfect for your kiddos if they are having a Halloween party!
Line a baking sheet with parchment paper and preheat oven to 350 degrees.
Cream the butter and sugar together until light and fluffy.
Stir in the egg and yolk, and Kool-Aid packets.
In a separate bowl, stir the flour, baking soda, cream of tartar, and salt together.
Gradually add to wet mixture.
Using a small cookie scoop to scoop 2 Tablespoon sized mounds of dough. Form each one into a ball and roll in sanding sugar.
Bake for 10-12 minutes or until edges a golden. Allow them to cool for a couple of minutes before frosting.
Meanwhile, prepare the buttercream by creaming butter for about a minute on medium speed.
Add powdered sugar one cup at a time mix on low speed.
Add vanilla and coffee creamer. Increase speed to medium-high and mix for 5 min until light and creamy.
Spread onto cooled cookies.
