Somoa Cookie Bark

Who doesn’t love Girl Scout cookies?! I mean, seriously. They are about as classic as you can get! No matter your age, they are undoubtedly a beloved yearly treat. The only downside is just that, you can only find them once a year.

Well, guess what?! I have the answer to this problem. I have the cookie bark of your Girl Scout cookie loving dreams. If you are a lover of the Somoa cookie, then you will really love this bark. It has all of the elements of the iconic cookie. The best part is it can be made year round!

Preheat oven to 350 degrees F. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.-152IMG_5502Preheat oven to 350 and line a cookie sheet with parchment paper. In a large bowl, cream the butter and sugar together until light and fluffy.

IMG_5505Mix in the flour.

IMG_5506Spread onto cookie sheet and bake for 8 minutes.

IMG_5513Meanwhile melt the caramels (in microwave in 30-second intervals) with water. Stir and spread over cookie layer

IMG_5516Melt chocolate in microwave 30-second intervals. Drizzle over coconut and allow to set before cutting into pieces.
