Tropical Punch Truffles

I hope you’re staying cool this summer! Let’s just say, I’m definitely one of those people that limit their time outside (in the summer) unless I’m anywhere near water. That being said, it is now the time of year that I keep my no-bake recipes close by.

Normally, candy is a thing you avoid making in the summer- at least in the South. This is mostly because it can be nearly impossible to get candy to set in hot and humid weather. Luckily, I have one foolproof recipe that can be made year-round. These buttercream truffles do not call for any cream cheese, which can often hinder the candy firming process. They are packed full of tropical fruit flavor. They are pretty much a tropical vacation for your mouth. If you’re able to get away this summer, these truffles are sure to do the trick.

Preheat oven to 350 degrees F. Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.-164

Line a baking sheet with wax paper. Set aside

In a medium-sized bowl, mix the confectioner’s sugar and butter together

Mix in the heavy cream and candy flavoring

Scoop tablespoon-sized balls onto the baking sheet. Chill for 20-30 min

In a separate bowl, melt the candy coating. Coat each buttercream ball with candy coating

Top with sprinkles. Chill until candies firm 30 min
